January 14: Lemon Butter Chicken

Since Chris always talks about how he wants to be with someone who can cook, and that’s something I want to be able to do for myself and any future children I have, I tried my hand at cooking something new today.  I found a recipe online for a Lemon Butter Chicken recipe that sounded tasty and easy.

I went to the grocery store after I got off work and bought all the ingredients, including spices, since I was going to be cooking it in Chris’ apartment and I really don’t remember what he has stocked up there.  To my happy surprise, the total for all the ingredients was around $25–way less than I was expecting.

I put everything together and made the sauce.  I only made half a serving but forgot to adjust for the sauce so it came out more of a soup…which really I had no problem with because it was so good on its own!

I made four large skin-on chicken thighs with the spinach in the sauce and seasoned appropriately with salt, pepper, and paprika.

The chicken didn’t come out as crispy as I wish the skin had been but the sauce more than made up for everything else that was lacking!

I was very, very satisfied with how this came out!  And Chris said it was good too!  We talked about maybe next time cutting up the chicken into smaller pieces and making a type of stew in with the sauce.  I hope to revisit this recipe again and improve my cooking!
